The long awaited summer is here is here! With summer come long leisurely days spent outdoors - in the garden, at the park, at the beach..... That brings with it picnics and barbecues. What better way to celebrate summer than with light bites, finger food, cold soups, fresh salads and barbecues. Spinach, tomato, radish and blood orange salad served with a soy-sesame seed dressing

Ingredients (serves 4)
Salad
8oz/0.5lbs/227g baby spinach
½ cup cherry tomatoes, quartered
4 radishes, sliced into circles
¼ red onion (¼ cup), sliced thinly into rings
1 blood orange, cut into bite-sized pieces
2 tablespoons sesame seeds
Freshly ground black pepper to taste
Salt to taste
Dressing - Soy-sesame
Ingredients (serves 4)
¼ cup soy sauce
¼ rice vinegar
¼ cup canola oil
2 tablespoons orange juice
1 tablespoon sesame seed oil
2 tablespoons honey
Method
Toss together the baby spinach, cherry tomatoes, radishes, red onions, blood orange, sesame seeds, black pepper and salt in bowl, then transfer to salad plates.
Combine all the ingredients for the soy-sesame dressing in a bowl and mix thoroughly
Serving suggestions: Drizzle the dressing over the salad or serve on the side. You can buy ready-made soy-sesame dressing from your local supermarket or grocery store, but for the freshest taste you can make your own in 10 minutes!
