30 Minute Meals - Week 3 - Blue Cheese, Fig and Almond Pizza


Welcome to my 30 minute meals series! Lately it has felt like there are too few hours in the day to do all the things I need to get done. With the summer coming to an end and the kids back in school I am sure I am not alone. Since making fresh and delicious meals for my family is very important to me, I have resorted to my secret weapon - 30 minute meals. Simple, delicious and quick recipes that dazzle the taste buds for when it gets really busy. Join me in September and October for my 30 minute meal series! Today I will be sharing my recipe for Blue Cheese, Fig and Almond Pizza. I got the idea for this pizza at a culinary festival I attended in Friburgo, Brazil, called Festivalde Truta (Trout Festival). Friburgo is a charming city established by Swiss immigrants located 160 km northeast of Rio de Janeiro. Swiss and German-style houses amidst a backdrop of lush mountains and cascading waterfalls, gentle rivers and lakes with crystal clear waters, make Friburgo a relaxing destination off the beaten track. Blue Cheese, Fig and Almond Pizza

Preparation time: 10 minutes Cooking time: 15 minutes Total time: 25 minutes

Ingredients (serves 4) 14–15-in/36–38-cm pizza base 2 tablespoons olive oil 4 oz/0.25 lb/113 g blue cheese, grated 8 pickled or fresh figs, sliced thinly ¼ cup red onion, diced ¼ cup sliced almonds Freshly ground black pepper to taste

Method 1. Preheat the oven to 400°/200°C. 2. Place the pizza dough on a pizza pan, then drizzle the surface of the pizza with olive oil. 3. Top the pizza with blue cheese, figs, onions, almonds and black pepper. 4. Place pizza in the oven and bake for 15 minutes or until the dough is crisp and brown.

Tip: You can also use naan or pita bread as pizza base.
