With the summer coming to an end and the kids back in school I am sure I am not alone. Since making fresh and delicious meals for my family is very important to me, I have resorted to my secret weapon - 30 minute meals. Today I will be sharing my recipe for Mussels in a Blue Blue Cheese Sauce. I developed a taste for mussels oddly enough in Melbourne, Australia. We discovered a lovely restaurant that served mussels in several different ways, each delicious and unique, accompanied by a wide-selection of beers from all over the world. I tried every variety of mussels they had and along the way was inspired to create a few recipes of my own. Enjoy!!!
Mussels in a Blue Cheese Sauce
Preparation time: 10 minutes
Cooking time: 10 minutes
Total time: 20 minutes
Ingredients (serves 4)
4 lbs/1.8 kg fresh mussels
2 tablespoon olive oil2 cloves garlic, minced
2 cups milk3.5 oz/100 g
1 shallot, chopped
¼ teaspoon nutmeg
Salt to taste
Method
Wash the mussels thoroughly; remove the beard (hairy part) of the mussels if still present.
Heat the olive oil in a large pan over low heat, then fry the garlic for 30 seconds.
Increase the heat to medium/high, then add the milk and bring to a boil.
Add the blue cheese and stir for 2 minutes or until melted.
Add the mussels, nutmeg and salt to the pan and simmer (be sure to cover with a lid) for about 5 minutes or until most of the mussels have opened (some may open faster than others).
Remove from heat. Throw away any mussels that did not open.
Serving suggestions: Serve the mussels along with the broth, fresh bread (preferably a French baguette and steak fries)
