The thought of summer always brings a smile to my face, with memories of long hot summer days spent lounging, a cold and fruity drink in my hand. With summer comes along the 4th of July, pool parties, park parties and barbecues filled with some of my favorite things - warmth, cold fruity drinks, delicious food, cool and tasty treats. Throughout the summer I will be sharing some delicious recipes with you inspired by the 4th of July. Today I will share my recipe for Mediterranean Chicken Burgers. Ingredients (serves 4)
Chicken burgers
4 whole wheat or sourdough buns
450g/8oz/0.5lb chicken
2 tablespoons olive oil
2 cloves garlic, minced
¼ small onion, diced
¼ teaspoon allspice, ground
Freshly ground black pepper to taste
Salt to taste
4 slices onions, cut in rings
4 slices tomato, cut in circles
4 lettuce leaves
Lavender Sauce
Ingredients (serves 4)
1 cup plain yogurt
1 clove garlic, minced
¼ cup fresh mint leaves, finely chopped
1 tablespoon culinary lavender flowers
¼ teaspoon nutmeg
Method
Put the chicken, 1 tablespoon olive oil, garlic, onions, allspice, black pepper and salt in a food processor and mince (chicken can be bought already minced from the grocery store, in this case just mix the already minced chicken with the other ingredients)
Form the chicken into patties with a diameter of about 10cm/4inches
Heat 1 tablespoon of olive oil in a pan over medium heat and cook the chicken patties for about 5 minutes on each size (you can also cook the chicken patties over an open grill for 5 minutes on each side); You may want to cook the chicken patties for longer depending on your preferred doneness
Combine all the ingredients for the lavender sauce in a bowl and mix thoroughly; Place a slice of onions, tomato and lettuce on a wholewheat or sourdough bun, top with a chicken pattie and lavender sauce
