Spring Freshness - Week 1

Spring is here!!! Some of the many things things I love about spring are that beautiful shade of green the grass takes on after a long and sometimes gray winter, the beautiful wildflowers as they burst into color, the warm sunny days, the fresh evening breeze, but most of all, I love how suddenly there is an abundance of fresh vegetables, fruits and herbs in dazzling vibrant colors. Spring makes me think of quick, healthy and delicious salads and soups. I am kicking off spring with my spring freshness series. I will be sharing several healthy, fresh and delicious recipes which will dazzle your taste buds, but go easy on your waistline as swim season rolls around. Today I will be sharing by recipe for Caprese salad, a fresh, delicate and delicious salad from Italy, which simply means salad from Capri. As with many Italian dishes, it is simple with the focus being on the flavor and quality of the ingredients. Enjoy!!

Total time: 10 minutes

Ingredients (serves 4)

Salad

2 large red tomatoes, washed and sliced into circles

8oz/0.5lbs/227g fresh mozzarella, sliced into circles

¼ cup loose basil leaves, washed

Freshly ground black pepper to taste

Salt to taste

Dressing

¼ cup balsamic vinegar

Method

  1. Place alternating slices of tomato and mozzarella, then sprinkle with basil leaves, salt and pepper

  2. Drizzle with balsamic vinegar

Tips: You can use 1 red tomato and 1 yellow tomato instead of 2 red tomatoes for a more interesting color contrast. To have this salad as a meal, use the above ingredients x4 to serve 4 people.
