Spring is here! It's so wonderful when the weather starts to get warmer, the grass starts getting lush and green, the first wildflowers appear in a burst of vivid reds, oranges, yellows, pinks and purples......In Texas where I live the State flower is the bluebonnet - a rare and beautiful blue flower, it has just began to appear in the fields. To celebrate spring I will be doing a ‘Spring and Brunch Series’. Today I am sharing my cardamom french toast recipe with you. I came up with this recipe recently when I felt like having french toast for bruch and also felt like something with an Indian flavor. I hope you enjoy!
Cardamom French Toast
Preparation time: 5 minutes
Cooking time: 15 minutes
Total time: 20 minutes
Ingredients (serves 4)
4 eggs
1 cup milk
¼ teaspoon nutmeg, ground
8 cardamom pods, ground
1 teaspoon vanilla extract
Pinch of salt
12 slices whole wheat bread
1 ½ tablespoons olive oil
4 ¼ cup of honey
Optional Ingredients
¼ cup sliced almonds, lightly toasted
1 mango, sliced lengthwise
Method
Beat together the eggs, milk, nutmeg, cardamom, vanilla and salt in a deep bowl with a whisk until frothy (1 minute)
Soak the bread in the mixture until completely coated
Lightly coat a large griddle or frying pan with oil and place over medium heat
Place the bread in griddle or frying pan in batches of 3-4 (depending on the size of your pan), do not overlap.
Cook each side of the bread for 2 minutes or until light golden brown
Remove from heat and place in plates then drizzle with honey and sliced almonds
Serving suggestions: Serve with slices of mango on the side; you can use almond milk for a healthier option
