Falling in Love with Fall - Week 1 - Waffle Iron French Toast

Welcome Fall!!! I am so glad autumn is finally here!!! It has been a wonderful summer with lots of travel, book signings, adventure and amazing food but after almost 4 months of temperatures in the 90's (deg F) I am ready for a change. Fall is also my favorite season. I love fall colors - oranges, reds, yellows and gold. I also love fall produce and all the wonderful recipes that come along with it. But most of all, I love that the holidays will soon be here. I started my Sunday with Waffle Iron French Toast. I hope you enjoy my Falling in love with Fall series!!!

Preparation time: 10 minutes

Cooking time: 15 minutes

Total time: 25 minutes

Ingredients (makes 4)

8 slices of white or whole wheat bread

4 eggs

1 cup whole, skimmed or almond milk

1 teaspoon vanilla

1/8 spoon nutmeg

2 tablespoons honey

2 tablespoons butter

Optional

1 cup blueberries for garnish

Method

1. Beat together the eggs, milk, vanilla, nutmeg and honey in a large bowl

2. Turn on the waffle maker and grease with butter

3. Soak the bread, 1 slice at a time in the egg mixture. Place 2 slices in the waffle maker (it is okay if the slices of bread overlap)

4. Close the waffle iron and cook until done (2-4 minutes depending on your waffle maker); repeat steps 2 and 3 for remaining slices of bread

5. Serve with pumpkin sauce or your favorite topping
