Happy St Patrick's Day!!! I am starting off the day with these wonderfully green and healthy buckwheat pancakes. One of the things I love about St Patrick's Day is the opportunity to make all things green. These pancakes are naturally colored This is one of the recipes that will be featured in my upcoming baby and toddler cookbook. This cookbook will feature health, international and easy to make recipes for your growing little one which will expose them to a wide range of flavors Enjoy!!!
Preparation time: 10 minutes
Cooking time: 20 minutes
Total time: 30 minutes
Ingredients (serves 8)
1/2 cup pistachios, ground
1/2 cup buckwheat
1 egg
3/4 cup milk
1/4 cup honey
1/2 teaspoon nutmeg
1 teaspoon baking powder
8 teaspoons butter
Optional Ingredients
1 teaspoon green food coloring
Method
1. Place the pistachios, buckwheat, egg, milk, honey, nutmeg, baking powder and food coloring in a bowl and mix until smooth
2. Place a 5 1/4 inch pancake pan or frying pan on low heat
3. Add butter to the frying pan
4. Add a spoon of the pancake mix and gently move the pan to spread the mix evenly
5. Fry each side for 1-2 minutes until done
6. Serve warm and drizzle honey or maple syrup before serving
