Spring is here! It's so wonderful when the weather starts to get warmer, the grass starts getting lush and green. and the sky takes on that wonderful blue color that instantly puts a smile on your face. This year we started spring visiting Fredericksburg a beautiful German town in the Texas Hill Country with German style houses, great restaurants, rich and diverse history, delicious wine but what I love most about Fredericksburg is the lush and beautiful green countryside bursting with wildflower in vivid reds, oranges, yellows, pinks, purples and of course blue (bluebonnets the official flower of Texas are blue!). To celebrate spring I will be doing a ‘Spring Freshness Series’. Join me for a fresh and delicious culinary journey around the World!

Ingredients (Makes about 12 medium crepes)
Crepes
1 cup flour
½ teaspoon nutmeg, ground
¼ teaspoon salt
1 egg
2 cups milk
½ tablespoon sugar
½ teaspoon vanilla extract
4 tablespoons olive oil
Filling
1 cup low fat yogurt
½ cup lingonberry preserve or jam
1 cup fresh strawberries, sliced
½ cup blueberries
Method
Mix the dry ingredients together - flour, nutmeg and salt
Beat the eggs, milk, sugar and vanilla together with a whisk or an electric mixer until frothy
Beat in the dry ingredients until smooth
Heat a medium frying pan over low heat, then add 1 teaspoon of oil to just coat the base of the pan.
Use a soup spoon to scoop the crepe mixture into the pan so that the mixture forms a very thin crepe, then fry each side uncovered for about 1 ½ - 2 minutes or until golden brown
Place a crepe on a plate and spread a layer of yogurt over it, top with another crepe, then spread a layer of lingonberry preserve or jam and fresh strawberries and blueberries; continue making alternate layers of yogurt then lingonberry preserve or jam and fresh strawberries and blueberries
Spread lingonberry preserve or jam and fresh strawberries and blueberries over the crepe at the top
Tips: To save time, you can fry the crepes in 2 frying pans simultaneously. This will reduce the cooking time; you may find lingonberry preserve or jam at your local grocery store, otherwise you will find it in a Scandinavian grocery store. Alternatively, you can use cranberry preserve or jam
